Crunchy chicken salad

This yummy and crunchy dish by Chef Claudio Aprile (@claudioaprile1) is the perfect transition dish from summer to fall.

Ingredients

For the Crunchy Chicken Salad

  1. 1 small whole BBQ chicken
  2. 3 tablespoons chopped green onion
  3. 1 soupspoon of chopped mint
  4. 1 soupspoon chopped coriander
  5. 1 whole Red chili
  6. 1 oz lime juice
  7. 1 soupspoon toasted peanut
  8. 6 cherry tomatoes halved
  9. 1 soupspoon toasted sesame seed
  10. 2 large red radish cut into rough chunks
  11. ½ cup seeded cucumber cut into rough chunks
  12. ¼ cup julienne red onion
  13. ¼ cup canned chickpeas
  14. ¼ cup green grapes

For the Dressing

  1. 2 oz olive oil
  2. 1 soupspoon of grated ginger
  3. 1 oz lime juice
  4. ½ oz Thai fish sauce
  5. ½ oz rice wine vinegar

Instructions

  1. Combine all ingredients for the salad.
  2. Combine all ingredients for the dressings.
